Our olives are handpicked from the branches and sorted using grading techniques to ensure only the finest quality. They are then placed in cylindrical containers with only olives and salt, their mouths sealed tightly. The containers are regularly rotated to allow the olives to ferment naturally. Within 3-6 days, these olives ripen without any additives, thanks to the natural fermentation process.
